I tried my best to recreate this recipe. To be honest, I already had all the ingredients at home except for the soy sauce, so I bought a bit. In my country they sell a brand called Kikkoman, and yeah—that's the one I use on a daily basis. I chopped some vegetables and fried them until they were crispy, and then added the noodles.

This is how my plate looked while I was eating it. I was thinking about how it tasted very different from the idea I have of Chinese food, or even from the Chinese food I've tried in Basel. It would have never occurred to me to add carrots or celery. What I understand as Chinese food is almost always scallions, some ginger, and maybe sesame oil. Still, it catches my attention how it changes from one part of the world to another. I guess it's also because the Chinese population that migrated to Latin America must be from a different region—who knows.
